Fall Gardening & Overwintering

Think your vegetable garden is done for the year? Don’t put those tools away just yet! Fall is actually one of the best times to grow fresh produce, and a little cold weather actually makes your veggies taste better. Focus on hardy crops like spinach, kale, carrots, garlic, beets, and radishes.

When light frosts hit, these plants turn their starches into natural sugars to keep from freezing, giving you a remarkably sweet, fresh flavor. The secret to success comes down to simple protection. Toss a light row cover or cold frame over your patch when freezing nights set in. Better yet, toss three inches of straw over root crops like carrots, and you can dig fresh veggies straight out of the ground all winter long.

Give fall gardening and overwintering a shot—your dinner table will thank you!
